About Ingredients

Whenever possible, we use local ingredients. When local options are unavailable, we source them from other regions. We also occasionally receive organic vegetables from local farmers we know.

Requesting Ingredients​

While we keep basic ingredients in stock, you can request additional items if needed.

  • How to Request: Write the items you need on a piece of paper and post it on the refrigerator.
  • Shopping: The owner goes shopping twice a day, around 10:00 AM and 3:00 PM. (You are welcome to join!)
A Note on Requests

We do our best to accommodate requests, but some items may not be available in town or may be too expensive to purchase. If you absolutely need a specific specialty ingredient, it may need to be covered by individual staff members. Thank you for your understanding.

Items Hard to Find or Expensive in Town​

The following items are often difficult to provide even upon request:

  • Butter: We only purchase a few boxes (200g) per day.
  • Cheese: Processed cheese is available. Note: We occasionally receive artisanal cheese from the owner's brother's workshop.
  • Fruits: Apples, peaches, strawberries, grapes, and melons are often too expensive.
    • Bananas are always available.
    • Canned fruits (peaches, pineapple) are kept in stock.
  • Beans: Chickpeas and lentils are available in small quantities.
  • Chocolate: Small quantities only.
  • Nuts & Avocado: Usually not stocked as they are very expensive.
  • Peanut Butter: Small amount of sweetened type only.
  • Tahini: Please make it yourself from sesame seeds.
  • Mayonnaise: We make this from scratch each time, so it is not kept in stock.
  • Fish: Not usually provided due to the strong smell.
  • Others: Bacon, lasagna sheets.

Stocked Ingredients List​

Here is a partial list of ingredients usually kept in the kitchen. Please let us know if we are running low.

  • Root Vegetables: Potatoes, carrots, burdock root, onions, garlic, ginger
  • Leafy Greens: Cabbage, Chinese cabbage (Hakusai), garlic chives (Nira), scallions, leeks, Mizuna, Shiso, bean sprouts
  • Mushrooms: Shiitake, Maitake, Shimeji, Enoki
  • Others: Tomatoes, eggplant, pumpkin/squash, bell peppers, broccoli
🌾 Grains, Flour & Noodles
  • Rice & Grains: White rice (freshly polished daily), brown rice, glutinous rice, rice flakes, Mochi (rice cakes)
  • Flours: Bread flour, cake flour, rice flour (not specifically for bread), breadcrumbs, Kinako (roasted soybean flour), Joshinko/Shiratamako (rice flours), Dango-ko, buckwheat flour (Sobako)
  • Noodles: Dried pasta, Soba, Udon, Somen, glass noodles (Harusame)
  • Starches: Potato starch (Katakuriko), cornstarch
🫘 Beans, Dairy, Meat & Eggs
  • Beans & Soy: Lentils, chickpeas, soybeans, Natto, Tofu (firm/silken), Atsuage (deep-fried tofu), Aburaage (tofu pouches), soy milk
  • Dairy & Eggs: Chicken eggs, milk, butter (salted/unsalted), heavy cream, yogurt, processed cheese, artisanal cheese
  • Meat: Chicken thigh, sliced pork, sausages

  • Basics: Mirin, soy sauce, cooking sake, miso, salt (sea salt/rock salt)
  • Sugar: Granulated sugar, brown sugar, cane sugar
  • Oils: Rice oil, olive oil, sesame oil
  • Vinegar: Rice vinegar, apple cider vinegar, balsamic vinegar
  • Sauces & Pastes: Fish sauce (Nam Pla), Tabasco, ketchup, Worcestershire sauce, oyster sauce, curry flakes, Doubanjiang, Tianmianjiang, Gochujang, green curry paste, tamarind paste, Umeboshi
🌿 Spices, Herbs & Aromatics
  • Whole Spices: Cumin, coriander, mustard seeds, cinnamon, cloves, fenugreek, cardamom, nutmeg, fennel, chili, star anise, black pepper (electric mill available)
  • Powdered Spices: Cumin, coriander, turmeric, nutmeg, chili, paprika, white pepper, five-spice powder
  • Herbs: Bay leaves, dried parsley, dried basil, rosemary, lemongrass, curry leaves, Kasuri Methi, oregano, Kaffir lime leaves
  • Condiments: Toasted sesame seeds (black/white), Ichimi (chili powder), Shichimi (seven-spice), mustard, wasabi

  • Canned: Pineapple, mandarin oranges, tomatoes, corn, tuna, coconut milk
  • Seaweed & Dried: Dried shiitake, Kombu, Iriko (dried anchovies), Katsuobushi (bonito flakes), Nori, Aosa, Wakame, Hijiki
  • Processed: Konnyaku, spring roll wrappers (fried/fresh), Tenkasu (tempura bits)

  • Baking: Chocolate, honey, dry yeast, baking soda, baking powder, Kansui, gelatin, Agar (Kanten), vanilla oil/essence, powdered sugar, cocoa powder, Matcha powder, Moringa powder
  • Beverages: Black tea (Ceylon), Hojicha, green tea, papaya tea, coffee beans
  • Alcohol: Wine (red/white), beer, Umeshu (plum wine)
